Street food has been an integral and well established aspect of Chinese food culture ever since the Tang dynasty (618-907AD). Resembling crêpes, Jianbing, also known as the Chinese pancake, is one of China’s oldest and most popular street delicacies. A popular street breakfast in China, its main ingredients are a batter of wheat and grain flour, eggs and sauces, cooked quickly by spreading the dough on a large hotplate frying it to a crisp and topping it with different fillings and sauces such as coriander, spring onions, mustard pickles, radishes, soybean paste, chilli sauce and tianmianjiang. The crepe is then rolled around a crispy fried wonton, folded in half and served. It is never cooked ahead of time and waiting for your turn is part of the culture. There are jianbing vendors in almost every neighborhood in urban areas, serving breakfast from dawn to mid-morning. It is part of The China Series, a visual documentation of my trips to China.
